Carrot cranberry Salad


Carrot ribbons made by using a vegetable peeler to shave the carrot into long ribbons.The ribbons are then blanched in boiling water for 30 to 45 seconds.Then the warm carrot ribbons are covered with a lime and lemon juice marinate for at least five hours or more. A hour before serve time a hand full of dried cranberries are added into the mix to blump up with flavor. The marinate is the juice of two limes and one lemon, half cup honey and salt and pepper to taste.

New potatoes boiled and salted, cut into quarters, one sweet white onion chopped fine, one red pepper diced, hand full of parsley cut fine, topped with a red wine vinegar mustard dressing. The dressing mix is three quarters of a cup of red wine vinegar, tablespoon olive oil, two teaspoons grainy mustard, teaspoon white suagr, clove garlic pressed, half teaspoon salt, half teaspoon pepper.

Strawberry Salad


Half and half baby spinach and young leaf lettuce, green onions, and a cup of strawberries sliced in quarters. Dressed in strawberry dressing. The dressing mix is two cups fresh strawberries, three quarter cup apple cider vinegar, one tablespoon olive oil, one clove garlic pressed, and salt and pepper to taste.

Pineapple Salad


Pineapple with spearment, dressed with the juice of a lime, teaspoon honey and pinch of salt. This I had for lunch today.

Blueberry Pineapple Salad


Blueberries and Pineapple, dressed with coconut cream dressing. The dressing mix is one and a half cups canned cocnut cream blind in with three spears pineapple.

Peach Salad

Orange And Cucumber Salad


Two oranges peeled, cut one and a half of the the oranges into small pieces and save the half orange for the dressing. Cut a cucumber into the same size of pieces as the oranges. Four spearmint leaves cut fine and sprinkled on top of the salad. The dressing mix is the saved half of orange, quarter cup rice vinegar, juice of half a lemon, one tablespoon honey, tablespoon sunflower oil, salt and pepper to taste. Put it all in a blinder and blind until smooth.

Blackberry And Green Apple Salad


lettuce from my garden with a layer of green apples cut paper thin. Soak the apples in fresh lemon juice for a few minutes before adding into the salad. Then add a layer of thin cut onion rings. Then garnish with a few blackberries. Top it off with blackberry dressing. The dressing mix is two thirds blackerries blinded in the blinder, a quarter cup rice vinegar, a tablespoon light oil, one clove pressed garlic, teaspoon honey, salt and pepper to taste, then blind some more.

Cucumber And Mint With Raspberry Dressing

Steamed Broccoli With Sun Dried Tomato Salad


Steamed broccoli cut up into mouth sized pieces, sun dried tomatoes cut into small pieces and laced in with the beoccoli , add in some capers to taste. No need to dress this salad when using sun dried tomatoes that have been packed with olive oil.

Kale Salad


The way to make this salad is to remove the back bone of the kale leaf. The leaves are then rolled tightly into little rolls and sliced thinly. Then you squeeze and massage the kale leaves in you hands for a few minutes. Then add in a teaspoon of salt and squeeze and massage the salt with your hands throughout the kale. Then add a tablespoon of olive oil and squeeze and massage some more. Then add one orange sweet pepper chopped fine and one red sweet pepper chopped fine. Mix it all up. The dressing is a mix of quarter cup apple cider vinegar, teaspoon honey and a small clove of pressed garlic. Let the salad set in the fridge for an hour or two before serving.

Rosewater Salad Dressing


I make my own rosewater. I pack a sealer jar with rose petals and pour over them a cup or two of boiling water. When the lid pops the jar is sealed. I then put the jar away in a cool dark room for a few days. Then I strain out the rose petals and the remaining water is ready use. The water will smell of rose and be a deep pink color.

This salad dressing mix is seven tablespoons of rosewater, one good tablespoon of honey and the juice of a fresh lime or lemon. If too much lime or lemon juice is used or if vinegar is used in the dressing the rose flavors will be overpowered.

Rose Salad


Half and half tender mild leaf lettce and rose petals. There have been a few young green oinions added in, be careful to not add in too much green onion, as it can overpower the rose flavors. The salad is topped with rose water dressing.

Green Salad With Avocado And Hemp Seeds


Green salad of lettuce and green onion, layered with thinly sliced cucumber. Topped with sliced avocado and sprinkled with Hemp Seeds. The dressing is a blind of three quarters of a cup of mixed strawberries, raspberries, blackberries and blueberries blinded with the juice of one lemon, two tablespoons of honey, one clove of garlic and two tablespoons apple cider vinegar.

Celery And Yellow Pepper Salad


Equal amounts of celery and yellow pepper, the celery is cut paper thin. The yellow pepper is cut into fine even pieces. Sweet white onion cut into thin rings. The dress is the juice of a fresh lime and honey added to taste.

Baby Romaine Lettuce With Mango Dressing


Baby romaine lettuce, young green onions with celery cut paper thin. The dressing is one large mango and the juice of one lime blinded in the blinder. The garnish is more celery with parsley.

Zucchini Ribbons With Fresh Tomato Mainara


The zucchini ribbons are made by shaving the outside of the zucchini with a potato peeler. The marinara sauce is made with three large fresh tomatos cut in quarters, half of a large white onion, one sweet red pepper, ten sun dried tomato halves, two cloves garlic pressed, generous tablespoon dried basil, one tablespoon olive oil. salt and pepper to taste. Put it all into a blender and blind untill smooth. Spoon over the zucchini ribbons and garnish with parsley and green onion.

Orange And Green Grapes


This is another great breakfast salad. Oranges with young green grapes, garnish with lime zest and topped with honey lime dressing. The dressing mix has the juice of two fresh limes with three good tablespoons honey.

Grapefruit And Spearmint


This is a great breakfast salad. Grapefruit with spearmint topped with Lime honey dressing. The dressing mix is the juice of two limes and two or three tablespoons of honey depending how sweet you want it.

Zucchini Slaw


The garden is full of zucchini so time to make slaw. Two cups grated zucchini, two cups grated green apple, one cup grated white onion, one cup grated carrot, one large sweet red pepper chopped. Topped with one cup apple cider vinegar, quarter cup sunflower oil, three or more tablespoons honey, salt and pepper to taste.

Zucchini With Red Onion Salad


Zucchini dipped in milk and egg, rolled in flour and fried in butter, resting on a bed of green leaf lettuce, and topped with lots of thinly sliced red onion. The dressing is made of red wine vinegar, olive oil and sweetened with honey.

Thinly sliced cucumber with black sesame seeds, topped with red wine vinegar. Dressing mix is half cup red wine vinegar with a quarter cup sunflower oil, three teaspoons white sugar, one and a half teaspoon salt, one teaspoon black pepper.

Pitted Bing Cherry With Mango Salad


This beautiful salad makes for a great breackfast. It is made by alternating layers of pitted quartered fresh Cherries and cubed ripe Mangoes. Topped with a Lemon Honey dressing. The dressing is made from the juice of one large fresh Lemon mixed in with three tablespoons of Honey.

Strawberry Watermelon Salad


This lovely salad is half Strawberries and half Watermelon chunks, garnished with a few fresh Spearmint leaves for flavor. It is dressed with the juice from three fresh Lemons and three tablespoons of Honey.

Watermelon Blueberry Salad


This is a great summer salad. It is half Watermelon chunks and half Blueberries. It is garnished with thinly cut Spearmint leaves and dressed with Honey and Lime juice. I used the juice of four fresh Limes and three tablespoons of Honey to make the dressing. The spearmint was mixed into the honey with the lime juice for flavor and after resting for about half an hour, it was poured over the salad.

Cool Cucumber Watermelon Salad


This salad is half and half cucumber and watermelon chunks. It is dressed with a sweet vinaigrette. The dressing can be made with either white vinegar or apple cider vinegar. The mix is a half cup vinegar to quarter cup oil, three tablespoons honey or white sugar, one teaspoon salt to a half teaspoon pepper.

Spinach Salad With Apple Cider Vinegar


Tender young spinach leaves with a few young beet leaves throwen in with baby onion greens. Dressing mix is half cup apple cider vinegar, quarter cup olive oil, two or three tablespoons honey, teaspoon sea salt and half a teaspoon black pepper.
