Diced pears and quartered strawberries, garnished with spearmint, dressed with a lime honey dressing. The dressing mix is the juice on one lime with three tablespoons of honey

Mango Orange Pepper Salad


Diced mangos and orange peppers, resting on a bed of lettuce and garnished with cilantro. The dressing mix is half and half mangos and ornage peppers blinded together in the blinder with the juice of one lemon and honey to taste.

Sliced boiled baby beets, resting on a bed of garden lettuce, and diced sweet white onions, garnished with parsley and dressed with white vinegar vinaigrette. The dressing mix is three quarter cup white vinegar, quarter cup olive oil, two teaspoons white sugar, salt and pepper to taste.

Green cabbage from my garden, green onions, parsly and lots of sweet orange peppers diced. The dressing is half cup of apple cider vinegar, tablespoon olive oil, tablespoon honey, salt and pepper to taste.

Carrot cranberry Salad


Carrot ribbons made by using a vegetable peeler to shave the carrot into long ribbons.The ribbons are then blanched in boiling water for 30 to 45 seconds.Then the warm carrot ribbons are covered with a lime and lemon juice marinate for at least five hours or more. A hour before serve time a hand full of dried cranberries are added into the mix to blump up with flavor. The marinate is the juice of two limes and one lemon, half cup honey and salt and pepper to taste.

Lettuce from my garden, green onions and parsley, one orange and one pink grapefruit diced. The dressing is the juice of half a pink grapefruit, the juice of one lemon, one tablespoon of honey and salt and pepper to taste.

Potato Salad


New potatoes boiled and salted, cut into quarters, one sweet white onion chopped fine, one red pepper diced, hand full of parsley cut fine, topped with a red wine vinegar mustard dressing. The dressing mix is three quarters of a cup of red wine vinegar, tablespoon olive oil, two teaspoons grainy mustard, teaspoon white suagr, clove garlic pressed, half teaspoon salt, half teaspoon pepper.

Strawberry Salad


Half and half baby spinach and young leaf lettuce, green onions, and a cup of strawberries sliced in quarters. Dressed in strawberry dressing. The dressing mix is two cups fresh strawberries, three quarter cup apple cider vinegar, one tablespoon olive oil, one clove garlic pressed, and salt and pepper to taste.

Pineapple Salad


Pineapple with spearment, dressed with the juice of a lime, teaspoon honey and pinch of salt. This I had for lunch today.

Blueberry Pineapple Salad


Blueberries and Pineapple, dressed with coconut cream dressing. The dressing mix is one and a half cups canned cocnut cream blind in with three spears pineapple.

Red Cabbage With Yellow Peppers And Sesame Seed Salad


Red cabbage with yellow peppers, sweet white onions and sesame seeds. Dressed with half cup rice vinegar, tablespoon sesame seed oil, large teaspoon honey and salt and pepper to taste. This is a good salad for the colder months of the year.

Tender green lettuce with young cucumbers, green onions and Pansy petals. This salad is good dressed with a plain white vinegar dressing. The dressing mix is a half cup white vinegar,two tablespoons sunflower oil, two to three teaspoons white sugar, salt and pepper to taste.
